Babche Wines

We are a small family operated organic vineyard and farm in Southwest Victoria. This is an emerging cool climate region not represented as a Geographical Indication. Our vineyard is situated on an escarpment of clay and limestone with maritime influence from the Southern Ocean. Here we are growing a dense planting of Chardonnay, Pinot Noir and Cabernet Franc. Vineyard practices are organic with influence from biodynamic and permaculture philosophies.

In addition to our farm, we work closely with two growers from historic regions within Victoria; the Goulburn Valley and Pyrenees. These sites differ climatically and due to this, we can work with varieties that we would otherwise not ripen in our cooler region. Chardonnay, Viognier, Grenache, Sangiovese and Syrah are grown on mature vines tended by the same individuals for over a decade. The intuition in the vineyard that comes from experience is extraordinary and invaluable. Farming practices are NASAA Certified Organic and/or Biodynamic for these vineyards.

All work from vine to bottle is completed by hand. Fruit is hand-picked and brought to our winery on the farm where it is manually processed on a 70L stainless steel basket press. Ferments are wild. Temperature control is not used however we appreciate our cooler climate to produce healthy, slower ferments. Wine is matured in either stainless steel or old French oak. With much consideration, we do not use additives nor preservatives in the winery. The focus is to make wine of one variety representing its place and made in the technique of past generations – by hand and unadulterated.
